Chicken Aloo Qorma


Chicken Aloo Qorma


 Recipe Ingredients

  • Potato  ½ kg
  • Chicken  ½ kg
  • Onion (brown) 2
  • Yogurt  250 gm
  • Chili powder 2 tbsp
  • Coriander powder 1 tbsp
  • Nutmeg mace powder ½ tsp
  • Green cardamom 5 – 6
  • Black cardamom  3
  • Cinnamon  2 sticks
  • Cloves ½ tsp
  • Whole black pepper ½ tsp
  • Bay leaves 2
  • Water 2 cup
  • Ginger garlic paste  1 tbsp
  • Salt  to taste
  • Kewra water 1 tbsp
  • Ghee ½ cup

Recipe Method

  1. Heat ½ cup ghee in a pan, add 2 sliced onion and fry till golden brown. Remove brown onion and keep aside.
  2. In the remaining ghee add 1 tbsp ginger garlic paste. Fry for few minutes.
  3. Now add ½ kg potatoes, ½ kg chicken, 5 – 6 green cardamoms, 3 black cardamoms, 2 cinnamon sticks, ½ tsp cloves, ½ tsp whole black pepper and 2 bay leaves. Fry for 1 – 2 minutes.
  4. Now add 250 gm yogurt, 2 cup water, 2 tbsp chili powder, 1 tbsp coriander powder and salt to taste. Cover and cook till chicken is tender.
  5. Crush brown onion and add to the pan. Also add 1 tbsp kewra and ½ tsp nutmeg mace powder. Mix well.
  6. Simmer on low flame for 1 – 2 minutes.
  7. Dish it out and serve hot.

 Recipe Ingredients

  • Chicken whole 1
  • Vinegar ½ cup
  • Salt 1 tsp
  • Red chili powder 2 tsp
  • Chaat Masala 1 tbsp
  • Lemon juice 4 tbsp
  • Dalda Cooking oil to fry

Recipe Method

  1. Make cuts on chicken with knife, marinate with ½ cup vinegar, 1 tsp salt and 2 tsp red chili powder overnight. Now drain out  extra vinegar and deep fry in hot oil till it turn into golden brown color. Sprinkle 1 tbsp Chaat Masala and 4 tbsp lemon juice. Serve hot.

 Recipe Ingredients

  • Chicken pieces 4
  • Egg 1
  • Green chili paste 2 tbsp
  • Fresh coriander ½ bunch
  • Mint leaves ½ bunch
  • Black pepper ½ tsp
  • Salt to taste
  • Lemon juice 4 tbsp
  • Chaat Masala 1 tsp
  • Roasted cumin 2 tsp
  • Mustard paste 1 tsp
  • Oil (for frying) as required
  • Ingredients for coating
  • Eggs 2
  • Fresh bread crumbs 1 cup

Recipe Method

  1. Blend together 2 tbsp green chili paste, ½ bunch fresh coriander and ½ bunch mint leaves.
  2. Marinate chicken pieces with 1 egg, ½ tsp black pepper, 4 tbsp lemon juice, salt to taste, 1 tsp chaat Masala, 2 tsp roasted cumin, 1 tsp mustard paste, all spice powder and blended green mixture. Leave it for 2 hours.
  3. Cook the chicken in steamer till tender. Now take out from steamer, dip in beaten eggs, and roll in fresh bread crumbs, now deep fry in hot oil till its color turn to light golden.

Kids Fried Chicken

 Recipe Ingredients

  • Chicken breast (strips) 2
  • Cornflakes 2 cup
  • Flour ¼ cup
  • Corn flour ¼ cup
  • Eggs 2
  • Sesame seeds 2 tbsp
  • Garlic paste 1 tbsp
  • Lemon juice 2 tbsp
  • Crushed red pepper 1 tsp
  • Black pepper powder ½ tsp
  • Salt to taste
  • Coriander leaves ¼ bunch
  • Pineapple chopped 3 slices
  • Oil for fry

Recipe Method

  1. Cut chicken into strips.
  2. In a bow mix together salt, crushed red pepper, black pepper powder, garlic paste, sesame seeds and egg. Mix well.
  3. Add in chicken strips and marinate very well.
  4. Now add in chopped pineapple, lemon juice, flour and corn flour, mix well.
  5. Lastly add chopped coriander leaves and mix,
  6. Coarsely crush 2 cup cornflakes, coat marinated chicken with the cornflakes and deep fry till golden brown.
  7. Remove from oil, drain out excess oil and serve with ketchup or chili garlic sauce.

 Recipe Ingredients

1/2 kg Chicken (boneless)
1/2 tsp Salt
1/2 tsp White pepper
8 Mushrooms sliced
1 Carrot cut into diagonal slices
1 Spring onion cut into diagonal slices
6 Baby corn
2 tbsp Ginger sliced
1tsp Crushed garlic
1 tbsp Wooster sauce
2 tbsp Chili sauce
1 tbsp Oyster sauce
1 cup Water
1tsp Hp sauce
1tsp Salt.
1 1/2 tsp Black pepper
5 tbsp Ketchup
1/4 cup Oil
1 tbsp Corn flour
1/4 cup Water.

Recipe Method

Marinate 1/2kg chicken strips with salt and white pepper 1/2 tsp each. Heat 1/4 cup oil and fry  1 tsp crushed garlic for 1 min. Add marinated chicken and fry  for 5 minutes then add 8 sliced mushrooms, 1 sliced carrot, 1 spring onion and 6 baby corns with 1 tbsp Wooster sauce, 2 tbsp chili sauce, 1 tbsp oyster sauce, 1tsp hp sauce, 5 tbsp ketchup,  1 tsp salt and 1 1/2 tsp pepper, add 1 cup water and cook till the mixture boils.Lastly thicken the gravy with 1 tbsp corn flour paste. Serve with garlic rice

Hara Masala Chicken

 Recipe Ingredients

1 kg Chicken cut into small pieces
2 tbsp Ginger garlic paste
20 Green chilies chopped
1/2bunch Coriander leaves
2 cups Yogurt
2 tbsp Lemon juice
2 tbsp Ginger sliced
3/4 cup Oil
1 packet National Chicken Hara Masala

Recipe Method

In a blender grind together 20 chopped green chilies, 2 cups yogurt, 1/2 bunch coriander leaves, 2 tbsp lemon juice, heat 3/4 cup oil in a pan, add 2 tbsp ginger garlic paste, fry for 2 minutes add 1 kg chicken and fry for another 5 minutes now add 1 packet of national chicken hara masala and the blended mixture, cook for 20 minutes on medium flame till chicken done, lastly add 2 tbsp sliced ginger and serve with nan.
